For these and the following nachos—and for other dishes involving melted cheese—we suggest using a small amount of full-fat cheese, rather than low-fat cheese. Not only does it have better flavor, it melts better, too. If you like, you can spread a dab of bean dip on each chip before adding the other toppings.


  • ½ recipe tortilla chips (24 wedges)
  • ½ cup salsa, homemade or storebought, as needed
  • ½ cup grated jack and/or cheddar cheese


    1. Heat the oven to 400°F.
    2. Scatter the chips on a baking sheet in a single layer. Spoon about 1 teaspoon salsa on each chip. Sprinkle a teaspoon of cheese over and bake until the cheese is melted and bubbly, about 4 minutes. Serve hot.
