Combine the brown sugar, paprika, rosemary, ginger and lemon zest in a bowl, then season with salt and pepper. Rub the mixture all over the pork. Put the pork, onions and wine in the slow cooker.
Cover the cooker with the lid and cook on LOW for 12 hours until the pork is very tender and falling apart. Gently remove the pork from the cooker, wrap tightly in foil and leave to rest for 10
