This is one of my favorite ways to eat fish. Pan-fried fish is commonplace throughout Macedonia, and you can really use any fish you like. I love a meaty fish but a delicate fish would work just as well in this recipe.

Ingredients

  • 1 cup (125 g) all-purpose flour
  • 2 teaspoons kosher salt

Method

In a shallow dish, mix together the flour, salt, paprika, and 1 teaspoon of the chopped dill.

Coat each fish fillet in the seasoned flour and shake off any excess. Set aside.

In a large sauté pan, heat the oil until it begins to shimmer and reaches a temperature of about 350°F (180°C).
