These were our potato chips growing up. My father would make these for us as a late-night snack when we were watching a movie or playing board games. I highly recommend crumbling feta cheese over the top, which is my favorite way to eat them.

Ingredients

  • ½ teaspoon kosher salt
  • ½ teaspoon paprika
  • ¼ cup

Method

In a small dish, mix together the salt and paprika.

In a large sauté pan, heat the oil until it begins to shimmer, and reaches a temperature of about 350°F (180°C).

Working in batches to avoid crowding the pan, carefully place the potato slices into the oil. Fry for 3 to 5 minutes on each side until golden brown and cooked through. Transfer the potatoes to a plate lined with pap
