Name: Another Equally Epic Boxing Day Monster
Ingredients: Sunflower or vegetable oil, for frying; 40 g butter; 8 thick slices of roast turkey; A pinch of ground nutmeg; 1 large focaccia, cut into 4 equal pieces; 50 g plain flour; 250 ml white wine vinegar; 2 red or white chicory heads, shredded; 45 g Paxo sage & onion stuffing mix; ½ small onion, finely chopped; 8 thick slices of ham; 50 g breadcrumbs; 2 tbsp olive oil; 1 tbsp lemon juice; 1 cucumber, halved lengthways, and cut into half moons; 2 celery stalks, finely sliced, on a slant is nice; 125 g caster sugar; 1 bay leaf; 1 egg, beaten; 8 tbsps mayonnaise; Leftover roast turkey skin cut into bite-sized pieces; 4 pickled walnuts, drained and finely chopped, completely mashed up too is good; 375 ml full fat milk; A handful of flat-leaf parsley leaves
