Name: Another Equally Epic Boxing Day Monster
Ingredients: 50 g plain flour; 50 g breadcrumbs; Sunflower or vegetable oil, for frying; 2 red or white chicory heads, shredded; 250 ml white wine vinegar; 8 thick slices of roast turkey; 125 g caster sugar; 1 cucumber, halved lengthways, and cut into half moons; 1 tbsp lemon juice; 2 celery stalks, finely sliced, on a slant is nice; 2 tbsp olive oil; 8 tbsps mayonnaise; 4 pickled walnuts, drained and finely chopped, completely mashed up too is good; A pinch of ground nutmeg; 375 ml full fat milk; 1 bay leaf; 1 egg, beaten; 45 g Paxo sage & onion stuffing mix; 1 large focaccia, cut into 4 equal pieces; 8 thick slices of ham; 40 g butter; A handful of flat-leaf parsley leaves; ½ small onion, finely chopped; Leftover roast turkey skin cut into bite-sized pieces

I originally wrote this naughty little number for the Christmas issue 2017 of Olive magazine. It makes sandwiches for four VERY hungry people. It wasn’t meant to be made with leftovers but to be more of a fantasy Christmas Sandwich.
