Ingredients: Sunflower or vegetable oil, for frying; 2 tbsp olive oil; 50 g breadcrumbs; 375 ml full fat milk; 1 egg, beaten; 45 g Paxo sage & onion stuffing mix; 1 large focaccia, cut into 4 equal pieces; 1 bay leaf; 50 g plain flour; 2 red or white chicory heads, shredded; 40 g butter; Leftover roast turkey skin cut into bite-sized pieces; 250 ml white wine vinegar; 8 thick slices of ham; 2 celery stalks, finely sliced, on a slant is nice; 8 thick slices of roast turkey; 4 pickled walnuts, drained and finely chopped, completely mashed up too is good; ½ small onion, finely chopped; 8 tbsps mayonnaise; 125 g caster sugar; A pinch of ground nutmeg; 1 cucumber, halved lengthways, and cut into half moons; 1 tbsp lemon juice; A handful of flat-leaf parsley leaves

I originally wrote this naughty little number for the Christmas issue 2017 of Olive magazine. It makes sandwiches for four VERY hungry people. It wasn’t meant to be made with leftovers but to be more of a fantasy Christmas Sandwich.
