  • 500 g strawberries, hulled
  • 100 g caster sugar

Method

Halve or quarter the strawberries depending on size and place in a large bowl. Put the sugar and water in a large pan and slowly bring to the boil to dissolve the sugar, then add the vanilla pod and seeds, and crushed peppercorns. Remove from the heat and pour the syrup over the strawberries. Leave to macerate in a warm place for 15 minutes.

To serve, drain the strawberries, removing th
