This savory-sweet pilaf is like a stew in that it is good to make on a night when you can assemble and start the cooking of dinner early on, and then get some work done while dinner cooks. This is good, too, to serve on a night when your partner comes home late because it takes a while to cook and it will remain hot enough to eat for about 45 minutes after you’ve removed it from the oven.
