If you make this about 30 minutes before it’s needed, the vegetables will have just started to soften and soak up the exceptionally tasty dressing.
With a sharp knife, slice the onion and cabbage as fine as you can. The carrot can be either cut into fine matchsticks or coarsely grated, Place these ingredients in a bowl.
In a separate bowl, mix together the mayonnaise, peanut butter, rice vinegar, fish sauce and honey. Mix into the vegetables and your coleslaw is ready to serve with the steak and chips.
