Saç böreği is a speciality of Konya. It is cooked on a flat iron pan or griddle over a very low fire. The cheese used for this kind of börek must be very dry; a “wet” cheese would make the wafer-thin yufka dough disintegrate.

If you wish, you can cut this börek in half after filling and cook it in a nonstick frying pan, but take care not to overcook it or it will be dry.
