Tavuk göğsü is a celebrated Istanbul dessert. In Turkey this is a dish you would buy from a muhallebici – a milk pudding shop; few people would make it at home. It does not taste of chicken at all; it is a delicious, creamy dessert.

The chicken breast must be shredded into thin fibres, which is very time-consuming, and it is said in Turkey that the breast must be taken from a freshly slaughtered chicken if the fibres are to be fine enough.
