Until recently bubble and squeak was only cooked at home, an ideal way of using up leftover potatoes, but now it regularly appears on restaurant menus. Its name supposedly comes from the noise the ingredients make in the pan. The cabbage can be replaced with other ingredients, such as Brussels sprouts and spinach. The addition of a little crisp bacon, although not traditional, is very good.
