These Indian-style potato fritters are made with sliced white sweet potatoes dipped in a delicate spicy batter and fried until crisp. The kachumber salad makes an ideal accompaniment.

Ingredients

  • 150 g (5 oz) gram flour (chickpea flour)
  • 1 tablespoon

Method

Put the gram flour, garam masala, mustard seeds, turmeric, cumin seeds and baking powder in a bowl and mix well. Stir in enough iced water to make a thick batter, then add the chillies, spring onions and coriander. Leave to rest for 20 minutes.

For the salad mix the tomatoes, red onion, chilli, garlic, oil and lemon juice in a dish and season to taste. Arrange on a serving plate, scatte
