Kibbeh is a Middle Eastern dish traditionally made of finely minced meat mixed with onion, spices and cracked wheat. There are lots of variations throughout the Middle East - for example, the Egyptians prefer to replace the wheat with ground rice. Here’s a potato version of kibbeh with a meat filling, plus a couple more variations on the theme.
