That pop of brilliant hot pink is hard to resist! Roasted sweet beets are the star of this hummus. Try layering it with avocado on whole-grain bread or on toasted Mini Buckwheat Bagels. Divine!
Ingredients
1 small or medium red beet, chopped, roasted, and cooled (see Roasting Beets below) (½ heaping cup)
Place the roasted beet, chickpeas, garlic, tahini, lemon juice, cayenne, and salt in a food processor and process continuously. Add water or aquafaba, gradually, as you process until a creamy consistency is reached. Taste and reseason.
