Method

Heat the oil or fat in a deep-frying pan. Prepare the brains as described. Cut the brains into halves or, if you prefer, into four. Dry, and dust with seasoned flour. Using a spoon, coat the brains with batter and fry carefully to a golden brown. Serve with tomato sauce.
