  • 1 lb tomatoes, fresh or tinned, skinned and chopped

Heat the oil in a small frying pan and brown the garlic. Add the tomatoes, salt, pepper and sugar and cook, stirring, for 10-15 minutes. Add the freshly chopped herbs and serve.
