This is a far cry from Alan Partridge’s favourite service station snack. They have been a staple in the shop for over five years and have a very loyal following. The spices and seasoning make all the difference.

Ingredients

  • 4 free-range organic eggs, at room temperature
  • 390 g minced pork
  • 1 tsp

Method

Hard-boil the eggs for 6 minutes then refresh in iced water. When cold, peel and leave to one side.

Season the minced pork with the dried spices then divide into 4 even balls. Take one ball, flatten it out in the palm of your hand and wrap around an egg so that the egg is completely enclosed in the meat. Keep gently massaging the mince around the egg until it is completely sealed and mi
