  • 100 ml light olive oil
  • 2 large onions sliced
  • 2 red peppers, thinly sliced

Method

  1. In a large flat saucepan heat the oil. Add the onions and sauté until they start to colour.
  2. Add the peppers, sugar, thyme, red chilli, cumin seeds and bay leaf. Continue to cook on high heat till they start to colour.
  3. Add the chopped tomatoes and continue to cook over a medium heat for 15 minutes, stirring occasionally.
