- 100 ml light olive oil
- 2 large onions sliced
- 2 red peppers, thinly sliced
Method
- In a large flat saucepan heat the oil. Add the onions and sauté until they start to colour.
- Add the peppers, sugar, thyme, red chilli, cumin seeds and bay leaf. Continue to cook on high heat till they start to colour.
- Add the chopped tomatoes and continue to cook over a medium heat for 15 minutes, stirring occasionally.
