This mix can be used with both savory and sweet preparations, but it’s especially good in dishes with some acidity, which enhances its flavor. Kala namak, a black salt used in Indian cooking, is traditionally included in dishes made with this spice blend. It’s available at most Asian and Indian grocery stores in both rock and ground form. Use ¼ tsp powdered Kala namak to every 1 tsp of chaat masala.
