Cut the tomatoes and place in a large container. Chop the garlic and celery into small pieces and mix through the tomatoes evenly.

Place the spices in a frying pan over medium heat and toast gently until fragrant. Place the toasted spices in a spice grinder and grind into a fine powder. Pour the spices into a bowl and mix with the sea salt. Sprinkle the salt and spice mix over the tomat
