  • 1 cup (90 g/3.2 oz) oat flour (gluten-free if needed) (see notes)

Instructions

  1. I recommend using metric measurements. In a bowl, mash the banana with a fork, add the other ingredients, and whisk until just combined.
  2. Heat a little oil in a skillet over medium heat. Spoon some of the batter (I use one heaping ice cream scoop) into the hot skillet. Cook the pancake over medium-low heat, flipping halfway, until golden brow
