- 1 Tbsp vegetable oil
- ½ medium onion, chopped
- 1 green bell pepper, chopped
- Heat oil in a large skillet and sauté the onion, bell pepper, and corn for about 3–4 minutes. Add the garlic and sauté for a further minute.
- Add the chickpeas, soy sauce, all spices, and plant-based milk and cook over low-medium heat for a few more minutes, stirring occasionally.
- Meanwhile, make a batch of the vegan cheese sauce (sk
