This salad is great served as a mezza or served alongside grilled fish.

Ingredients

  • 1 kilogram fresh broad beans, cleaned and removed from pods, or 1 kilogram bag of frozen baby broad beans
  • juice of 2

Method

Bring a pot of water to the boil; add the broad beans and one teaspoon of salt. If you’re using fresh beans, cook for approximately 30 minutes; for frozen beans cooking time is approximately 15 minutes. Transfer the cooked beans to a sieve. Rinse with cold water and set aside until they are completel
