This sauce is usually eaten alongside fried or grilled fish. It is lovely as a mezza or a dip with drinks, with toasted Lebanese or pitta bread.
Place the tahina and water in a bowl and mix with a spoon.
When the colour of the tahina has changed slightly, add the crushed garlic, lemon juice and salt, and mix well.
