Cajun Tomato Sauce

This fresh piquant sauce is an example of what southerners call a “table sauce,” a condiment served cold or at room temperature and added to hot foods at the table. It is excellent with the Rice Omelet, Natchitoches Meat Pies, Field Peas, and Fried Vegetables.
