Beneath a luscious froth of sabayon, quickly grilled until golden brown, lies an assortment of fresh, sweet berries for a delectable summer dessert.

Ingredients

  • 600 g ( lb) mixed berries, such as strawberries, blueberries, raspberries and blackberries

Method

  1. Wash the strawberries, dry well, discard the stalks and cut each strawberry in half. Sort the remaining berries to ensure they are all fresh. Arrange the fruit on four ovenproof plates or individual shallow dishes.
  2. Half fill a large pan with water and heat until simmering. Have ready a heatproof bowl that will fit over the pan without actually touching the water.<
