The silky consistency of the tofu absorbs the dark smoky taste of the soy dressing in this rich and flavourful dish. Tofu has a nutty quality that blends agreeably with the salty sweetness of the soy sauce and the hints of garlic and spring onion.

2 blocks firm tofu

Method

To make the dressing, mix the spring onion and garlic in a bowl with the soy sauce, chilli powder, sugar and sesame seeds. Leave the dressing to stand for a few minutes, allowing the flavours to mingle.
Meanwhile, bring a large pan of water to the boil, and add a pinch
