Very popular in Assam and the rest of north-east India, this appetizing dish, Kath Alu Paleng Sakor Torkari, is easy to prepare and extremely nutritious. The yam is cut into small cubes and browned in perfumed, spicy mustard oil. The spinach is then added in quickly, and the yam cooks in the spinach juice.

  • 675 g/ lb yam
  • 5 ml/1 tsp</

Method

  1. Peel the yam and cut it into 1cm/½ in cubes. Soak in cold water for 30 minutes, drain and dry with a cloth. Sprinkle in half the turmeric and half the salt and mix well.
