In West Bengal this zesty drink is known as Lebur Sharbat and it is very refreshing during the heat of the oppressive summer months. Many different varieties of lemon and lime are available in east India and you can use either citrus fruit, or a combination of both, according to your preference.


  • 30-45 ml/2-3 tbsp caster (superfine) sugar
  • 5 ml/1


  1. Put the sugar, salt and water in a large jug (pitcher) and stir with a spoon until the sugar has completely dissolved.

  2. Add the lime juice to the jug and stir well to combine. Chill in the refrigerator for about 1 hour.
