Caramelized Milk Chocolate Leaf




  1. Cut out ten 12.5-cm/5-in squares of parchment paper. Have 10 small pieces of tape available.
  2. Pipe a strip of chocolate measuring 2.5 cm/1 in wide by 10 cm/4 in long across the center of each parchment paper square.
  3. Place a chocolate comb at the center of the slug, and rotate it from the center to the left. Return the comb to the center of the slug, and rotate it toward the right.
  4. With a gloved hand, run a finger on both sides of the combed chocolate stripes to form a leaf.
  5. When the chocolate has semi-crystallized, bring two ends together and tape them so they stay in place.
  6. Let the chocolate set completely on the parchment paper. Take it off of the paper and remove the tape when ready to use.
