  • 500 g (1 lb 2 oz) ripe mango

Method

Chop the mango to a pulp with a knife or in a blender, add a pinch of salt and push through a nylon sieve with the back of a spoon. Discard any fibres. The remaining syrup should be thick but should not contain any stringy bits of pulp. Refrigerate until cold.

Blend the mango with the milk and yoghurt, either by hand or in a blender. If you would like the lassi a little colder, add abou
