Marmande tomatoes are one of the highlights of the summer season, with their firm skins and intense flavour Their irregular shapes and colours ranging from stripy yellow to pillar-box red may look peculiar, but the taste is phenomenal, and they need nothing but a drizzle of olive oil and a bunch of spicy, locally grown herbs to make a terrific simple meal.


  • 600 g Marmande tomatoes
  • big bunch of basil or thyme
  • 4 tbsp olive oil
  • sea salt
  • freshly ground black pepper


    Core the tomatoes and slice them finely. Remove the leaves from the basil stems and chop roughly; strip the thyme leaves off their stalks. Place the tomatoes in a bowl. Add the herbs, olive oil and seasoning. Serve at once with crusty bread.
