We love this recipe so much that we end up having gingerbread all year round, not just at Christmas. The addition of cream cheese makes the resulting biscuits either meltingly soft like a freshly baked cookie or crunchy like the gingerbread biscuits you buy, depending on how long you bake them for. Whichever way you prefer them, they are delicious. Gingerbread is lovely unadorned, but we like to decorate them with fondant or water icing for a more festive feel.
