Street food occupies a celebrated position in India’s cuisine, and it is as rich in flavor as it is diverse, from the hot and spicy succulent meat kebabs served on soft roomali rotis (a handkerchief-thin flat bread) to the sweet-and-sour tastes of chaat. The dressing in this salad is loosely inspired by the ingredients and flavors used in India’s street food.
