Chickpea Salad with Date + Tamarind Dressing

Street food occupies a celebrated position in India’s cuisine, and it is as rich in flavor as it is diverse, from the hot and spicy succulent meat kebabs served on soft roomali rotis (a handkerchief-thin flat bread) to the sweet-and-sour tastes of chaat. Rather than spending my time eating in restaurants, I make it a point to indulge in street food on every trip. The dressing in this salad is loosely inspired by the ingredients and flavors used in India’s street food.
