Come December, we’d dust my grandparent’s large wooden dining table with a mixture of cornstarch and confectioner’s sugar, and on this we’d roll out logs of marshmallows. I’d joyfully play with the soft pillow-like logs, my arms and face becoming covered in white powder. I’ve reworked my grandmother’s original recipe by adding cream of tartar. Back then in India, corn syrup (glucose) wasn’t readily available, so she relied on lime juice to achieve the same result.
