Fennel and Peppered Strawberry Salad

This lovely summer salad is a great combination of colours, tastes, and textures. It makes an ideal hors d’oeuvre on a summer evening when the British strawberries have come into season.

Ingredients

  • fennel bulbs 2 medium
  • watercress 2 bunches
  • orange

Method

  1. To make the dressing, combine the juices with the olive oil in a bowl.
  2. Finely slice the fennel on a mandoline and marinate it in the dressing for 15 minutes.
  3. Toss the fennel and its dressing with the watercress and the segmented orange.
  4. Dip or roll the strawberries in the black pepper, and use as a garnish around the edges of the salad bowl.
