This lovely summer salad is a great combination of colours, tastes, and textures. It makes an ideal hors d’oeuvre on a summer evening when the British strawberries have come into season.
Ingredients
Method
- To make the dressing, combine the juices with the olive oil in a bowl.
- Finely slice the fennel on a mandoline and marinate it in the dressing for 15 minutes.
- Toss the fennel and its dressing with the watercress and the segmented orange.
- Dip or roll the strawberries in the black pepper, and use as a garnish around the edges of the salad bowl.
