When June rolls around, go strawberry picking and make this pie, the harbinger of summer. It’s great with a topping of lightly sweetened whipped cream.

  • 1 cup unbleached all-purpose flour
  • ¼ cup sugar
  • ¼

Method

  1. Prepare the pastry: Toss the flour, sugar, cinnamon, and salt together in a bowl. Using a pastry blender, two knives, or your fingertips, cut in the butter until the mixture resembles coarse crumbs. With a fork, stir in just enough lemon juice for the dough to form a mass.
  2. Gather the dough into a ball, wrap it with plastic wrap, and refrigerate for 30 minutes.<
