For the Raw Squash

  • 1 butternut squash, neck end only


Peel the pumpkin. Trim to make a large rectangle; any trimmings can be used in the purée. Shave on a meat slicer at 1mm. The raw slices will be seasoned just before serving with a little of the pumpkin oil dressing. Set aside until needed.
