Method

Wash the mussels and clean the shells with a metal brush to remove debris.

Mushroom broth

Soak the white mushrooms in cold water to remove the excess sand. Carefully put them into a pan, fill with water and cook for 30 minutes, seasoning with salt. Remove the mushrooms and reduce the liquid to half.

Using a thick-bottomed pan, pour in the ve
