I have cracked it, literally! This is really good and if you have been a vegan for a long time and you miss eggs, you will hopefully thank me. If you are new to the whole vegan thing and thought you could not live without eggs, then let’s hope this will do the trick!

Ingredients

  • 4 slices of sourdough or good-quality gluten-free toast
  • 1 handful of watercress

Method

Let’s start off with the vegan egg. Put all the ingredients in a bowl and mix well. Heat a medium-sized non-stick frying pan (skillet) over a medium heat and add a splash of olive oil. Pour in the egg batter and allow it to spread in the pan. Once you see bubbles on the surface, after about 5 minutes, flip on to the other side and cook for another couple of minutes, it goes quick!
