Two of the few truly seasonal products left to us arrive in markets together: shad and nettles. Browned and buttery roe is dressed up with silky, moss-green nettle puree. Although some poach shad roe before sautéing, I think it spoils the special texture, which is both creamy and caviar-crunchy. Substitute shad fillets for the roe if you prefer, but increase the cooking time. Either way, steamed small potatoes alongside are a must.
