Melting Chocolate

You can melt chocolate quickly and easily in the microwave or in a double boiler.
In either method, make sure not to subject your chocolate to excessive heat. Also, always make sure your bowls are completely dry. If any water gets into the chocolate, the chocolate can seize up and become grainy.
