Paul retired from a long career as an engineer and computer entrepreneur in 1999. His passion for cooking led him Les Marmitons New Jersey Chapter of this international men’s cooking society with 19 chapters in Canada and the US. He quickly became an officer and webmaster for the club and began working with chef’s from New York and New Jersey in their monthly events. Sous Vide became a part of his arsenal when he built his own sous vide system in 2010 and won Jason Logsdon’s contest for the best DIY system. He introduced sous vide to the cooking society and they used his system to cook for large groups until he retired it and bought a new commercial version in 2019. He makes it a point to visit restaurant kitchens to meet the chef and learn about their cuisine. In this book he has offered two simple recipes he adapted from two such visits.
