Method
  1. Pull off the prawn head by holding the body and tugging gently at the head. Peel off the shell and legs from around the body, then (if removing) gently pull on the tail to remove it in one piece.
  2. Starting at the head end, devein the prawn by removing the dark digestive tract that runs along its back. Either pull it out from one end …
  3. ... or make a very shallow cut down the back of the prawn and lift it out. If you cut too deeply, your prawns will ‘butterfly’ out as they cook.
