There are two common species of bug (a type of slipper lobster): the Moreton Bay bug (also known as the bay or flat-head lobster) and the Balmain bug (pictured right). The Balmain bug has no pincers and uses its short, wide antennae to dig into sand and mud on the ocean floor in search of food. The meat of bugs is found only in the tail and is sold frozen whole or as cleaned meat. The bugs are best prepared by poaching, steaming, barbecuing or grilling.
