This onion has a confusing number of names — green onion, shallot and scallion — depending on where you live or what term you prefer. Spring onions are an immature onion that, if left in the ground, would grow to full size. Depending on when it is picked, it has a small, white bulb of varying size, and long green tops. Spring onions have a mild, delicate flavour and both the green tops and white stem can be sliced and added to salads or omelettes, tossed into stir-fries or finely shredded and used as a garnish. Spring onions are sold in bunches — look for ones that have firm white bases and undamaged green tops.
