Sun-dried tomatoes (pictured far right) have been halved, sprinkled with salt and left to dry in the sun. They are also commercially available in jars. These are soaked in a solution of vinegar and water, then drained, dried and covered in olive, oil sometimes with other flavours. Semi-dried, or sun-blushed, tomatoes are partially dried in a dehydrator. They need to be immersed in oil to preserve them for any length of time.
