Making filo pastry can be quite challenging for the home cook, so we have given quantities for ready-made filo pastry in our recipes. Filo pastry is available fresh or frozen and is sold in packets of rolled sheets. If using frozen filo, you will need to thaw the whole packet to remove the required amount of sheets. Because filo pastry is exceptionally delicate, the sheets will crack and tear if allowed to dry out. Take one sheet at a time and keep the remainder covered with a clean, damp tea towel until required.
