These are thin pancakes, similar to a crepe, filled with either a sweet or savoury filling. The pancake is folded into a rectangular packet and baked or fried until golden brown. Blintzes are of Eastern European origin and are traditionally eaten at Shavuot, the Jewish celebration held after Passover, when it is customary to eat dairy products. Typically, they are filled with fresh cheese, sprinkled with cinnamon and served with sour cream.
