The skin of stone fruit can be difficult to remove. One of the easiest ways to remove it is to first blanch the fruit in boiling water, but take care not to leave the fruit in the water for too long or it will start to cook. First score a tiny cross at the base of the fruit and put into boiling water for 10 seconds for ripe fruit and up to 20 seconds for less ripe fruit. Using a slotted spoon, transfer each one carefully to a bowl of iced water to cool. Carefully loosen the skin at the cross using a small knife, then peel away the skin.
